I have paired two Homepods for stereo but can only select one or the other for sound output on my Macs in OS Catalina. I an select the stereo pair inApple TV app but that’s it.
Agree, disappointing. There is a program for the Mac that will allow stereo playback from MacOS. It's called Airfoil. Also provides equalization controls. You can test it for free.

Well that’s lame. After googling the issue turns out it’s known since 2018. Very disappointing that Apple hasn’t bothered.
