legacy system extensions

What's best course of action for an iMac Mac OS Catalina user with regard to potential problems with legacy system extensions?

The new macOS won't be released for about a year so we have time to see if the developers produce updates for compatibility.

You could get an external HD, clone your current boot drive to it and install the public beta offering of Big Sur. Then you can occasionally boot into the EHD and check your apps, particularly the primary ones you use.

So far all of my must have apps work fine.
