It’s been a long time and Apple still haven’t fixed the annoying issue with Southern Hemisphere on watch! Wrong sides shown since it’s still showing moon for northern hemisphere! Shame!

Have you tried changing your Location settings?
On your iPhone Settings > Privacy > Location Services > Apple Watch Faces > 'While Using App'
This fixed my Sunrise/Sunset issue.
