Well, nothing has evolved to simpler any more.

Maybe a word processing application that is based on markdown syntax where you just write your content, and then apply formatting to specific content using certain keyboard shortcuts supported in the application. There are these kinds of applications in the Mac App Store, though you will have to decide if you want to pay for a subscription (Ulysses), or not (iA / Writer), or not go the markdown route altogether. The links are to the vendor's websites where you can trial before you buy. Any Microsoft 365 or Microsoft Word applications in the Mac App Store are subscription.

For more involved writing and associated organization, there is Scrivener which is also in the Mac App Store and the link will offer a free trial.

There are a great deal other word processing applications, but if you search in the Mac App Store for word processing, or writing keywords, you may find others more to your needs.

For any choice, check that it does not have a minimum macOS version requirement greater than what you have installed. For any application in the Mac App Store, you can scroll down to its Compatibility word, and it will state Works on this Mac and the version of macOS supported. For instance, Ulysses requires macOS 10.13 or later (High Sierra), so if you are still on Sierra, it won't work there.
