If you are frugal, save your money and use what you already have. In order to use your Lightning cables, you'd have to buy some adapter (which Apple doesn't make or sell) to convert a Lightning cable to USB C.

What did you do with the cable which came with your iPad Pro 11? Your old iPad Pro is Lightning to USB A. Your new iPad Pro is USB C to USB C.
I have the new cable but I have a couple of the lightning to USB A and I was hoping that there is a cable attachment that would allow me to use them as USB C.
My question would be WHY you want to use a cable not designed for your iPad in the first place?
Simply because I’m frugal and want to be able to use what I have if there is a low cost solution.
