I found the solution, i just deleted my phone from the Bluetooth List and then connected my phone again by the USB cable and IT WORKED !! Try this
Carplay worked this morning. This afternoon, suddenly get the message “Iphone not responding”. I have forgotten the device, restarted my phone, restarted my car, nothing is working.
Carplay is not syncing my phone ( not reading my phone) i updated the last iOS 13.5.1 and i am connecting Carplay via USB cable.

Yes me too, was just working so fine and then suddenly stopped and started to read my phone as an iPod only. I don’t know why and i want to fix thus issue, i guess it’s from the iOS 13.5.1!!!!
