Trying to transfer photos from iPhone 11 Pro Max 13.5.1 to Mac Mojave 10.14.6 via Lightning to USB cable. Message says I need to update to latest OS X software. Does this mean I must update to Catalina? I have documents and spreadsheets that I will not be able to access if I do that. What now?

iMac 27″, macOS 10.14

Hi! Have you considered syncing your photos from your iPhone 11 Pro Max to your Macbook via iCloud? Also, have you considered opening your documents and spreadsheets via google docs and sheets, respectively? (If the reason why you can't open your documents and spreadsheets is because you have an office 2016 or older?)

Thank you for your quick response. I did consider using the cloud, but am leary of it. Have never used it and don't really understand or trust it. I wanted to transfer my pics to Photos on my computer so I can use editing programs that I have as extensions to Photos. Yes, the reason I won't be able to open my spreadsheets and documents if I upgrade to Catalina is because I have Microsoft Office for Mac 2011. I didn't know about opening them via Google documents and spreadsheets. Can this be done after upgrade to Catalina?
