“Uninstall” an app update

My understanding is there is no way to uninstall an update that I did on an app today. But since the last backup for my device was to iCloud yesterday I thought if I just deleted the app and downloaded it again from the cloud it would be the older version that wasn’t updated. But it is still the newer version. I’m not understanding why it would do this. Automatic updates are turned off. Does this mean even if I restore my iPad using yesterday’s iCloud backup, the same thing will still happen? I’d rather not do a restore and lose new data on my device since the last backup. Thank you for any assistance.
