I only really use one subscription and that is an anime account called CrunchyRoll. Not one of your apple accounts. If I leave the family sharing, will I lose that subscription account too?

Not if you purchased it on your on, from your Apple ID account.
If you were the one that started the subscription, you will still be subscribed, but if you leave family sharing you will have to pay for the subscription.
I'm sorry I don't really understand. So the payment on the account won't stop if I leave the sharing account, and I can still use it?
