restarting old i phone
if i restart my old i phone while my new one is still being restored through i cloud backup, will it effect the restoring process and erase the things that haven’t yet been restored to my new phone ?

No since you are restoring the new phone from an existing backup. You would have to backup your old phone again and then restore the new phone from the newly created backup in order to see any differences.
