But you are stuck with the installed Apple iOS Notes app for that very old iPad 2.
The iPad 2 is an over 9-year old iPad, now!
There are NO MORE compatible apps for that old an iPad, any longer!
Your iPad 2 is going to be fully and completely obsolete by the end of 2020.

You're not going to find many 3rd party apps at all that are still compatible with a 9 year old iPad running iOS 9.3.5. ckuan's suggestion to use the built in native Notes app is likely your best option at this point.
