I am activating a new Iphone 11Pro from an Iphone 6. How long should the info transfer take? Screen says a few minutes but it has been spinning for longer than that. Not sure how to determine if there is an issue.

There really isn't a time frame it "should" take. It depends on several factors: the type of transfer you're using, how much data you're trying to transfer, etc. If you think it's taking a longer time than it should considering those factors, try using a different method? https://support.apple.com/en-us/HT201269
