So I’m getting my 2020 13” MacBook replaced under the 2 weeks return period and they told me to send back EVERYTHING including the retail box once I receive my shipping label. Will they be sending me a refurbished one even though it’s less than a week old?

If the one you purchased was NEW, the exchange unit will be NEW.
Interestingly, if you purchased from the Apple Refurbished Store, you can NOT return to a bricks and mortar store for a new one. That program requires you to return your refurbished unit to the refurbished store, and they will ship you a different refurbished unit, when available.
