Hi etheis02, I'm not sure I fully understand your question, do you need service for an Apple product? You can make Genius Bar appointments on this page. It sounds like maybe you want to buy something and were told to make an appointment to do that? That doesn't sound quite right to me.
It may be a COVID-19 related store-by-store policy, but my understanding is that when Apple stores re-open, after being temporarily closed or are otherwise observing COVID-19 related safety precautions, such as the one at 5th Avenue in NYC, for example, you can make an appointment for service, or you can order online at the Apple store and, if its in stock, pick it up at the store (but the ordering would be online).
Perhaps the local Apple Store near you is running things a different way. You can get the latest on Apple Store openings and re-openings, etc., here. The following excerpt from this very helpful FAQ on Apple Stores and COVID-19-related policies explains what I had in mind above:

A: You can shop, browse, and try out products at Apple Store locations that have fully reopened. We’re focused on limiting occupancy in every store, so you may experience short wait times before being allowed to enter.

Q: Can I come by and pick up a product without going into an Apple Store?
A: Many of our stores have pickup in front of the store or curbside pickup available for online orders. When you place your order online you will see pickup options for stores near you. You may be required to choose a time window for picking up your order. We’ll email you detailed pickup instructions and send you a text and email when your order is ready. You can also check the status of your order in the Apple Store App or at apple.com/orderstatus.

Wow! Thanks! I saw the articles on third-party sites, but I didn't see it referenced on the Apple 5th Ave website or on the FAQ for shopping there. But it's definitely there as you point out via the App! Great info.
