I bought the VESA mount, and I have been trying to remove the stand on my 2019 iMac, but I literally cannot figure it out. I have seen other threads where it cannot be removed, but I called Apple yesterday and they said it can. Has anyone had success removing the mount???

Older iMacs had a quick-release to jettison the stand for VESA mount installation without disassembly.
You 2019 does not. You have to cut open the sealed case and completely gut the computer to reach the internal attachment point holding the stand. There is great risk of damage to tiny connectors and you will void the warranty.
If you are within the 14-day return period, I recommend returning the iMac you just bought it and replacing it with one that is VESA-ready:

Thats what I was afraid of. Thanks for the info. Unfortunately I am outside of the 14 days. I called and asked apple if this was something they could do in the store and they said no :(
