If I do this to my 8 plus will everything be gone?

How can I be able to remove my password without anything in the phone being deleted ?

You can’t. To remove the password you will need the current password. If you don’t know it or your phone is disabled you must restore the phone, which will erase everything on it. You can then restore your backup. See this Apple support article—>If you forgot the passcode on your iPhone, or your iPhone is disabled - Apple Support or watch this video:
