Transferred Data from old iphone 8 to new iphone 11

For calls and texts move your sim card from the old iPhone to the new one: Remove or switch the SIM card in your iPhone or iPad - Apple Support

The sim card is what controls your cell service for calls and text messages.

For emails, if not using IMAP accounts either turn off the email account on the old iPhone, or wipe the old iPhone clean to sever all connections.
