issues with Icloud

Everything is backed up to my iCloud, or so I thought. When I log in, the only thing there is pictures from a 2015 vacation. Nothing else....no other pictures, no contacts...nothing. I get messages stating that my phone backs up every night, and when I look at my iCloud information, all of my apps except for mail is showing that they are using iCloud.
