Back Up Information for iPhone

Recently I backed up my phone and restored it. When it came time to put all my information in to get my iCloud and things up and running it never let me chose the back up option which is weird. So it’s oddly signed into my iCloud and has pictures and things inside the phone and old apps from MONTHS ago. It didn’t even finish putting the rest of the apps in my phone. I just want to know if there’s a way I could see my old back ups that I did in the past week and back it up to the most recent one! Cause this is ridiculous
