If I install a eGPU on my iMac, as iMovie or final cut, renders video will it share both processors, making it faster?

Both iMovie and Final Cut Pro can use multiple GPUs.

(I just ran a simple test render in iMovie with a 2018 Mac mini (6-core i5, UHD 630 + RX 570 eGPU) and hit ~80% GPU use in Activity monitor on both iGPU and eGPU).

As for faster, that depends on if the GPU is currently a limiting factory instead of CPU or drive speed. I'd suggest opening Activity Monitor and checking GPU history on your next render. If the GPU is maxed or nearly maxed then adding an eGPU will probably speed things up.
