How do I add a card that I don’t know the 3-digit security code to? I have an instacart Apple Pay card on my phone, and I want to add it to my watch. However, I never received a security code for that card. How do I go about this?

On your iPhone, open the Wallet app. Tap your Apple Card. Then tap the three dots in the circle in the upper right. Choose “Card Information”. The security code is shown there.

i have an Instacart Apple Pay card on my phone
I assumed, perhaps incorrectly, that this means you have an Apple Card that you are attempting to use with an Instacart app.
So when I signed up for Instacart, they gave me a card that was available for usage only with Apple Pay. Meaning I have a separate physical Instacart card from the card I use with Apple Pay. When I received the digitalized card, I never received a security code, just a card number. And when I go into my iPhones wallet app, I click on the Instacart payment card, and I see the card number and express settings. That is all.
When I tap on the three dots and go to “card information” it only shows the card number and express settings. No security code to be seen...
