All I could find was to change the syncing options under the "Summary| tab, but there isn't a "Summary| tab on iTunes for windows.
Super frustrated. This is one area where Android is way more user friendly.

The summary tab is shown when you have the iPhone connected to the computer, and you have selected the small icon at the top left for the device:
Otherwise, you can delete songs from the iPhone directly by holding down on a particular song until the menu appears and selecting "Delete from Library". Or tapping on the (...) icon in Album view and selecting "Delete from Library".

Thanks for the reply. Prior to receiveing this I just deleted iTunes from my PC and apple music from my phone and use VLC player instead. It's light, simple, open source, and allows me to transfer my music to my phone wirelessly without forcing my personal music into the apple ecosystem.
I am very happy with that solution.
