Try holding down the Shift key when you start Mail. That will open Mail without selecting the last read email.

If it opens without crashing, try selecting a Mailbox, then a message. If it crashes when a message is selected, you can try to view the message with your email provider's web portal. From there do what you need to do with the email and delete it. Mail should open normally afterward.

If it continues to crash while holding down the Shift key when starting Mail, try reinstalling the OS or install the most recent combo update for Mojave from support.apple.com.
