Unable to Install Software Update
I was given this computer by a friend and it is set to use their Apple ID for any App store purchases, how can I change this to be set to my Apple ID, so I can download the latest Microsoft 365 update?

Can you sign out of their ID in the App Store and sign in with your ID? If you are going to permanently keep the computer, I suggest you ask your friend to do the steps in the article below to make it 'your' computer. It would help prevent problems such as you are seeing now. If they won't do that, you need to do that to make it 'your' computer. Start with step 6.
