How can one change text size around a customised anchor point?

Thank you for any help you can provide me here.
I have searched through the community posts here on discussions.apple.com to find the answer I'm looking for, but no one has quite hit the nail on the head.
I'm seeking to adjust the anchor point of a text layer.
By default, the anchor point from which a text layer is adjusted is set in the bottom left, on the baseline of a single line of text. When the size of a text layer is adjusted, the size of the text changes outward or inward in relation to the given anchor point.
What I want to achieve is to move this anchor point to the centre left of the text layer, and then be able to change the size of the text so that the text grows outward from the right of the point, and that the text grows/shrinks both up and down in equal amounts.
I've added a silent video, linked to YouTube, to demonstrate what happens when I try to move the text layer's anchor point to the centre left, and then adjust the size of the text. The text continues to grow/shrink in relation to a given anchor point in the bottom left of the layer.
