I guess I don't know enough about it to even ask the right question ; )
so I've been reading about USB cables.
This Apple '-C to Lightning' cable I bought, apparently, can be 5 gbps (whatever that means); or 10gbps; or even less.
So how do I know which it is?
It doesn't say on the box.
I guess I'm just wondering if it's very fast?
but I'm not even sure if that refers to transfer speed? or what....

so the apple USB-C itself doesn't possess the speed; it's the computer that determines it; oh! got it.
so if you have a very fast computer, with a cable that's limiting ('slow'); then transfer speed is slow?
and if you have a slow computer, with a non-limiting cable (ie, fast) then the transfer speed is also slow?
and if you have a fast computer, with a cable that isn't limiting then transfer speed could be fast?
is that right?
and so the 'least limiting' cable, is it the USB-C?
or something else?
or maybe I don't have this right?

You pretty much have it, if you have bought the new MacPro and you have a Thunderbolt 3 drive on the other end that cable will easily transfer the data. It will easily do so with the next MacPro and Thunderbolt 4.
I have an iPhone 11; (and I don't know what a 'thunderbolt 3' is).
but how will the iPhone 11 do with a USB-C vs. regular USB?
and what about a USB-C with a newer Windows 10 computer desktop; fast computer; lots of ram; 2400 mhz, etc.

The computer I mentioned, and the external drive is several times faster than a PC unless you are going to build one with multiple Xeon processors that costs around $50,000.
I think this has gone far enough.

Are you asking about charging speed or data speed?
5 GBPS (gigabits per second) is very fast. That simply means the cable wii not be the limiting factor in data transfer speed. Most computers can’t even come close to that.

It doesn’t matter. Any USB-C cable will be faster than any hardware you are going to connect with.
