I have the same experience as Simon. Our watches don’t track distance in the water. We did all the recommend calibrations etc.... my series 5 NEVER worked right and my series 3 was fine until I recently updated to the latest watch os, which is now the same as my wife’s series 5. When will apple fix this?

We want you to have a great experience with your Apple Watch, and are sorry to learn that you're running into trouble with it. So we understand correctly, does this happen with the Pool Swim workout, Open Water Swim, or both? Does the Activity app display any data at all from the workout?
