Stolen iPhone “pending erasure”

My iPhone 7plus was stolen. Using Find My Phone app, I tried erasing it, but it is still pending until it comes “online”. I have a new phone now, but I can still track it because I haven’t removed it from I-cloud.

My concerns are:

1. Can the thief still break into the phone and get any personal info off the phone even though it is locked?

2. Should I remove the stolen phone from my I-cloud under “device”?

Re 1. That is highly, highly unlikely. Even governmental agencies have extreme difficulty or find it impossible.

Re 2: I wouldn't. If you remove it from your account it is no longer Activation Locked. The thief could reset it and use or sell it.
