Today I bought a iPhone 11pro max and I already want to trade it in for a iPhone 11 Pro. I bought the applecare insurance and paid in-full. My question is will I be able to switch the phones on AppleCare?

You have 14 days after purchasing the phone from Apple to return the device if you're not happy. When did you buy the 11 pro max?
If it's passed 14 days, you can trade in the phone or sell it privately, then put that money towards the new phone.
All Care and paying in full doesn't make a difference.
