I finally enabled iCloud keychain syncing and looking at it on my iPhone I see anyone can see all my passwords:
Im mortified to find out that all my passwords can be seen by anyone who steals or finds my iPhone. This doesn't seem very secure. Is there a way to turn off password showing for this list? Unlock the list with a PIN or something?

Then you'll need to enable Touch ID if you wish to have your data protected - Use Touch ID on iPhone and iPad - Apple Support.

Settings > Password & Accounts > Website & App Passwords > Edit (top right) > go down list to check all > Delete (top left).

I'm afraid there's no easier way. I agree, it's still onerous.
I don't think my next phone will be Apple.
