I lost my iPhone a couple of months ago and set it to “lost” and “erase” when and if it came back online and it was showing as “erase pending” on my iCloud account of devices. I have just noticed however that it has dropped off my iCloud list of devices. Does this mean it has been activated and erased it does it just drop off the iCloud account after a set period ?

Erasing the device doesn't necessarily remove it from your list of devices - If your iPhone, iPad, or iPod touch is lost or stolen - Apple Support, as you will have to perform the following to remove it from your list of devices - Remove a device from Find My iPhone on iCloud.com - Apple Support.
