Getting photos off my iPod 5th gen

Unless you explicitly used an option to include full resolution copies (which can be recovered by browsing the device in Finder/Explorer) your device likely has low resolution images which are difficult to extract. Some of the recovery tools listed in Recover your iTunes library from your iPod or iOS device - Apple Community claim to be able to do this.
