I currently have my iPad Pro connected to a monitor through the USB-C port. It is currently mirroring the iPad’s screen. Is there any way to have it extend the screen and have two apps open at once - one on the iPad and one on the screen? I have an external keyboard and mouse connected.

iPad doesn’t support extended desktop. If you think about it, the touch-UI paradigm wouldn’t make any sense...
The mouse, trackpad or external keyboard is an extension/enhancement to the touch-UI - they are not a substitute for it. The iPad and iPhone are designed first as a touch-controlled system - unlike traditional “desktop” platforms that employ an entirely different UI paradigm.
Yes, that is what I thought. I was thinking that it could work with a mouse or trackpad connected.
