imessage in CHina

With the discussion about security of other messaging apps in China I am trying to learn about the security of the message service there. From some limited reading it looks like data is stored in the cloud for users there. Is this only for those who have registered their accounts in China? If my relative has an iphone purchased i the US and their apple account is registered in the US will their data be accessible only here or is that also stored in on Chinese servers? Are messages between us encrypted and secure?

Your Messages and FaceTime conversations are encrypted end-to-end, so they can’t be read while they’re sent between devices.

End-to-end encryption

End-to-end encryption protects your iMessage and FaceTime conversations across all your devices. With watchOS, iOS, and iPadOS, your messages are encrypted on your device so they can’t be accessed without your passcode. iMessage and FaceTime are designed so that there’s no way for Apple to read your messages when they’re in transit between devices. You can choose to automatically delete your messages from your device after 30 days or a year or keep them on your device indefinitely.


iMessage apps

iMessage apps — which let you share stickers, songs, and more without leaving Messages — do not have access to participants’ actual contact information or conversations. iOS and iPadOS provide each app with a random identifier for each participant, which is reset when the app is uninstalled.

Yes, that is what I thought. However, she is not a citizen of China but does live there, I do not think backs up anything on the cloud. In addition she bought the phone here in the US and the apple account has long been registered in the US. She works there and I am wondering if this would be a better option than using services like wechat which are clearly not secure. Can I assume if all of the above is true, her data is not kept anywhere there where it could be viewed?
