What is the difference between adding a web site as a Favorite vs Bookmark in Safari on my iPhone? Why is there both and when do I use "bookmark" vs "favorite"?

Bookmarks is the general folder.

Favourites is a subfolder inside Bookmarks whose contents show up on your Safari favorites page.

If you want them to show always use Favorites.
