Every time ANY MacOS update installs, I immediately get an update for my Epson Scanner. This makes me very suspicious and creates a concern for system security. Is this an expected behavior? If not, how to I rid myself of this constant reminder that I have an update pending?
Right now I'm using a 2013 MacBook Pro with Catalina version 10.15.6.

Contact the printer's manufacturer. They're the ones responsible for it.
Contact a third-party vendor - Apple Support
If your printer is AirPrint-enabled you do not need any drivers for it, and whatever is responsible for those nagging messages can be removed.
Those Epson device software updates are from Apple. Apple is pushing those out to you. I would install them and not worry about it. They are coming through Apple's own System Preferences => Software Update panel, not from some third party, like Microsoft software updates do.
