Why is iTunes so difficult to manage music

It took some time to get all my music on my new 11. I finally got all the music I had on my iPhone 5. Then a short time latter it is all gone. Since switching from a PC, where I never had music management issues, I have had countless issues with iTunes. Why is apple so frustrating?

This is two a Step Process (To sync music from this computer, turn off Cloud Music Library)
