The Factory Reset Should Take Max 10 Minutes depending on how mush storage you used.

A Restore from iTunes Can take up to 25 Minutes also depending on how big the Restore File is.

I assure you it takes that long restoring from a Mac. Remember that apps are not stored in a backup, they must be downloaded from the app store. And music takes a very long time to sync even from a computer over a USB connection. Watching the progress it takes 1-2 seconds per track, so 10,000 tracks will take 3-5 hours (do the math).
