Before I started my Apple Music subscription, I had ripped all of my old CDs onto my hard drive. I am getting ready to cancel my subscription but I'm worried that all of my music that I own and purchased will be lost from my hard drive.

Be sure it's backed up somewhere. Leaving Apple Music should not remove any of your legacy music.
