Which mailing address? AppleID, Contacts - or something else?

For your AppleID

Payment & Shipping mailing address - as associated with your Payment Methods:

Settings > [Your Name / AppleID] > Payment & Shipping

Otherwise, for your own Contact Card, open the Contacts App and edit your own Contact Card.
