if i get the Apple Watch Series 3; GPS only - can I still pair with my phone which has a Virgin Media data plan to send texts, call, use maps etc?
I know Virgin Media doesnt support the cellular version of Apple Watch

the gps only Apple Watch connect to your iPhone and what carrier your iPhone is connected to is fully transparent for it.
it means that the Apple Watch has no idea how why or when the iPhone it is connected to is connected to the internet, it could be by a carrier or by wifi it has no idea, it could likely work just fine if your iPhone was connected to no carrier at all and only received internet by wifi from your local wifi
