I have just purchased an iPhone 11 and started transferring data from old iPhone 6. It’s been going all night with the screen saying updating iCloud settings. Why is it taking so long? Which steps did I miss?

Probably a lot of items stored on your iCloud that need to be downloaded . You can also refer to this link https://support.apple.com/en-ca/HT204184#icloud
and please make sure you have a good wifi connection during the process.
