Are the old computers accessible to you at the moment? If so, deauthorize them directly through iTunes (or the TV app or the Music app for Catalina) the computer. Elsewise, you’d have to wait until the 365 m-day waiting period is over to successfully can deauthorize all devices remotely (meaning with them not in your hands).
Looking to Rid if these Devices?:

Not necessarily. Did you try the Deauthorise All option?
So far, you haven't stated what you have done, or at which point the procedure didn't do what you expected, so it's not clear whether you have exhausted all options.
If you use Deauthorise All, it does just that - all of the authorised computers are deauthorised. Then - you Authorise the computer that you still have. The 365-day restriction applies when the standard method has been used more often than deemed necessary.

See Authorization vs. association - Apple Community. If you're not able to authorize your computer you can use iTunes, but you won't be able to play or transfer protected content. Reach out to Apple Support for assistance if you need to authorize a new computer, are currently using five authorizations, and cannot free up any of your old authorizations.

No. You sill have access to iTunes for a year - you just have to wait until a particular day of the year to deauthorize them all at once (not necessarily January 1, 2021, as depicted below).
