In the View menu, there will be one of two options: 1) Show Word Count, or 2) Hide Word Count. You want Show Word Count, by selecting that menu item. This will display by default, a floating panel at the bottom of your present Pages word processing, or layout document, showing a character count.

To set this panel to a Word count, you click on its opposing arrows. From the resultant menu, select words, and the panel will change to display that count. The word count will temporarily change to reflect any selected text, which is handy for checking words per line, paragraph, or the existing page itself.
