Something happened to my sons iPad mini and now it’s on activation lock and we don’t know the Apple ID or email used to set it up. Is there anything we can do?

Here are the Apple support pages that outline the Activation Lock - and the only mechanisms by which it can be turned off:

As you will discover, unless you are the owner of the AppleID that was last used to activate the device, or unless you can secure the cooperation of the previous owner, you’ll not be able to defeat or bypass the Activation Lock. Without documentary evidence that you are the original owner (such as sales receipt showing the serial number), Apple won’t assist - and nobody here will be able to help you.
If you are the owner of the AppleID that previously activated the device - and you have forgotten your AppleID or associated password, these can be recovered here:

Unless you AppleID account has not been fully/correctly configured, or has been seriously neglected, recovery of the AppleID and password should not be difficult.

Was this iPad purchased directly from Apple or an authorized reseller, or was this iPad purchased used from a third-party?
If this was purchased from Apple or an authorized reseller, the purchase receipt and matching ID and a discussion directly with the folks at Apple can usually clear this.
Activation Lock is a theft deterrent, and it wouldn’t be a particularly good one if there were effective and permanent bypasses.
You don't know? It's the same one you use with it to make iTunes or App Store purchases.
Unfortunately no we don’t know. it was set up several years ago with just a couple of apps that he was allowed to use.
We purchased new from Att years ago, but reset with new info for our son since purchase
