I purchased a new MacBook. I am giving my previous MacBook to my assist. The old MacBook is currently a mirror of my new MacBook, I do not want her to have access to all of my documents, etc. How do I give her access to certain files and my business email accounts?

Set the old Mac up as new. For email, if you’re using outlook in an enterprise environment, you can add her as a delegate. Else, you can add your business email account to Mail. For file sharing, you could use OneDrive, Dropbox, etc.
