I have multiple phone number for some of my contacts (ie Personal mobile and work mobile)
i have been texting their personal numbers but it keeps getting sent to their work number! Even for those whose personal is an Android, help! How do I ensure that the number I selected is the number the text/iMessage actually gets sent to. This is annoying

From reading your post, it appears when text certain contacts, the number is defaulting. to the incorrect number, correct? We're here to help you take a look into that!
When setting up this contact, how are the phone numbers categorized? Such as home, mobile, work, etc. Set the texting number to mobile and the other to home or work. Remove the message thread and attempt sending a message to this contact.
Set up and use iCloud Contacts
If the issue persists, remove the contact and re-add contact.
