I deleted my apple id and its stuck on my iphone

There is nothing you can do, and Apple will not be able to do anything for you either. You were instructed to be sure to sign the AppleID out of all services before it was deleted. Once it is deleted, there is no fix if you did not sign it out beforehand. There is no way to remove that AppleID from your device(s) now that the account with Apple has been deleted.

If you are the original owner, contact Apple. Apple may be able to remove the Activation Lock if provided the required paperwork. Since you deleted the ID, they may not be able to remove the ID. Either take the device, the original purchase receipt with the serial number, and a photo ID to the nearest Apple Store (if it has reopened)

What I mean is there's no other way around and I hope you are able to read the suggestions/comments of Michael and Eric.

I think you should've remove the iPhone first from the list of your devices under that Apple ID you deleted. I suggest to contact Apple Support for a second opinion. They might've a way.
