I realize I have been paying for two insurance coverages for quite some time: "AppleCare+ Theft and Loss" AND "T-Mobile <Protection360>". My latest iPhone 11 Pro was purchased ~Jan 2020 of this year directly from an Apple store.
Are there any benefits to having BOTH insurance protections? What are the primary pros and cons of each? If I were to cancel one, which should I keep and which should I cancel and why?

I know nothing about the T-Mobile plan.
The Apple plan depends on your location. So I suggest you do your homework and make your own judgement.

They both are just Assurant insurance Policies so I’d bet the terms of both are very similar (both Apple, and almost all carriers in the USA issue their insurance through partnership with Assurant as the Insurer).
The AppleCare+ with theft and loss coverage does also double your standard one year warranty period.
