Watch series 3 pairing with iPhone SE 2020 stuck after updating watchOS

The watch application has stack showing “your software is up to date”, no way to proceed with the pairing, there is only a cancel button.

the Apple watch screen is showing the screen “42mm Aluminum case...” with the small apple logo in the centre. If I click on it it gives “please continue setup on iphone”.

But there is no way to continue.

How can I proceed?

the watch was previously paired and working with an older iphone, which is now erased.

After trying out the steps, the problem persists. I contacted Apple support and they asked to get the watch to a service point, which I did.

It seems that my flow:

watch-series-3 paired and perfectly working for ~3y with iPhone 5s,
upgrade to iPhone SE - 2020, trying to pair the watch to iPhone SE

did not work. iphone 5s supports watchOS up to version 5.x, and to me this seem to cause the problem.

Let's see what Apple service will say/do. Hope it will not be charged, although watch is >2y old, because this is something that is supported and should work.
